So my husband's birthday rolled around and he's been talking about this Raspberry Jam Chocolate Cake that his Grandmother used to make, and I thought that it would make a perfect first post for my blog. I would have made it anyway, out of pure love and devotion, but there's no shame in doing two things at once right?
It's a pretty simple recipe, but SO good, as my hubby and his family agreed as they enjoyed it after dinner. The part of this recipe that I'll be giving you is just the filling and the frosting. For the cake you can use any chocolate cake recipe, or one of those box ones if you're really lazy, although then I won't vouch for the flavor.
If you need a really good cake recipe then I highly suggest this one
So here it is:
Raspberry Jam filled Chocolate Cake with Raspberry Jam Frosting
1/3 Overflowing Cup Raspberry Jam
2/3 Cup Sour Cream
1 Cup Chocolate Chips (Good quality like Ghirardelli)
1 Teaspoon Vanilla
(This is the frosting, for the cake just bake it, cool it, and put Raspberry Jam between the layers.)
Melt Chocolate Chips in a double broiler or whatever homemade equivalent you've created to make up for your lack there-of. Stir in the Raspberry Jam, Sour Cream, and Vanilla till totally blended. Let cool in fridge till a little thicker, and frost your cake.
I told you it was easy.
